Hmm I probably would save Ireland for Spring time. It’s way too cold during Winter.
The rest of the list will be chilly but manageable. Went to Germany for Xmas few years ago and enjoyed seeing the Xmas markets that were still open (they close before Xmas typically). It was really cold though.
I love Italy and Croatia so maybe either of those. Keep in mind that a lot of shops might be closed due to holidays and that weather is not the best. So if you’re picturing beaches and stuff, then none of those fits. Went to Portugal end of Nov 2019 and it can be quite rainy. It rained a few days I was there. Still had a great time. I do like Portugal quite a bit too.
Haven’t been to Turkey yet so can’t comment much. Maybe next year. Basically, they will have be chilly with possibly snow. So depending on what you like to see and do, that will help narrow things down. You honestly can’t go wrong.
