On an episode of Top Gear, Jeremy Clarkson had put together a mood board with pictures of things to inspire him. I'm doing a similar thing, sticking pictures and post-it notes of design ideas like the retractable extension cord reel on the back of our computer room door so that we don't forget them.....

If you meet the code requirements, you typically can do anything else you want. So, put the minimum number/location at standard height, then add all the others you want at higher positions, like for a game room (video and arcade games).
I used to know a guy named Pat Jeski in MI who was single and built a dream home. Very large high ceiling shop with pit, lifts and a bathroom and bar, plus hanging-out area. Small attached apartment one bedroom, kitchen, tv room. Really cool design - had it on facebook for a while so might find old pics there (2009 ish).
