So, from your perspective, is GTechniq better or just as good as Modesta? Also, what does your detailer charge for paint protection and the ceramic coating? For GTechniq, I'm still seeing quotes for about $1500. Everything I've read points to Feynlab being the most durable. Their support also seems to be better than Modesta's, which honestly would be my only complaint.

Durability on PPF will be reduced and quite variable depending on the coating. That said, you're probably overthinking it, just pick a good installer. PPF is super easy to keep clean, coated or not.
