My gut is that cost is a big driver on this change. Smaller screen and no buttons with a projector is less expensive than the larger screen they are currently using. Definitely less expensive than older designs with real gauges and buttons in the interior.
I currently own an iX and have had the last few generations of M3's and M5's so understand the direction they are going. I actually like the iX interior, but this new vision isn't for me. At least not yet.
