Non traditional Vegas food

Heading back to Vegas in november for SEMA. I'd like to experience some hole in the wall "regular" locals food.. instead of the hotel stuff. Any recommendations would be great, thanks!

I'm into anything.

Ellis Island BBQ. Best in town and dirt cheap. I’ll be at SEMA too and will hit that place at least twice.
