Yesterday back from Hampshire very hungry we tucked into Costco fajitas waiting in the fridge with plenty of mixed salad and a crafty glass of red.

So there is this legendary place called: Ronnie's Catfish & More here in the Dallas area. I've been eating there since I was a Teenager, some 3 Decades ago!!! Well, I've moved much further away these days and haven't eaten there in over a decade. Well, they finally opened a new location much closer to me. Dined on today with my lovely wife.
If you've never had true "Southern Fried & Seasoned CATFISH", you are missing out beyond words! But here's a picture, see for yourself...

Some for dinner this evening. I made a "cauldron" of Guinness Irish stew last evening. Had it in the oven all night on low convection @225°. The house smells really nice.

I'll be making a few containers for the freezer.
