A new twist for the KD concoction night. Thick slice of Cured and Dried Steak Strips.
I sliced the strip and submerged them in the boiling water for the Pasta to soften them. Pretty good but I'll slice them in smaller portion next time. |

Last evening, I only had a small portion of Tabbouleh with Naan bread since we had a birthday potluck at the clinic. The Naan bread is not authentic, I know but that's all I had on hand.

My son came home and HOOKED us up last night.
Brought his sourdough starter and made 2 fresh loaves. Messed up a bit and put WAX PAPER in the pans. Then he started in with sausages and hamburger to make spaghetti

Friday = tabbouleh!
Roses are still hanging in there, they will be gone soon. Same tabbouleh as usual, this time the seasoning is sumac. With grilled flatbread, cherries for dessert. |

Spaghetti with fennel and bitter greens
Recipe from Lidia Bastianich This was off the hook (good)! Deep and full flavor from anchovies used as a seasoning. Great combination of aromatics (garlic, onion and fennel) with the bite of mustard greens. A new item for the menu rotation! Makes 2 entree portions: 2 garlic cloves minced 1 fennel bulb, cored halved and sliced 1/2 onion, sliced 4 or 5 leaves bitter greens, chopped 3-4 filets anchovies EVOO Freshly grated Parmesan Salt Pepper Red pepper flakes 1/2 lb spaghetti Add spaghetti to boiling salted water. Mince garlic and cook in hot oil, add onions and cook until slightly softened. Add anchovies and cook until they start to disintegrate. Add fennel and cook until slightly softened. Add red pepper flakes. Cover and cook 5 minutes, stirring frequently. Add 1/2 cup or more pasta water, more EVOO and salt and pepper. Using tongs, transfer undrained al dente pasta into pan with veggies. Mix pasta with veggies. Add parmesan generously. Plate, add more parmesan and pepper flakes. Enjoy! Cherries for dessert. Bitter greens can be mustard, arugula, escarole, chard or endive. |
