“Mantolu Patlican.” A Turkish dish: ground beef rolled around cooked eggplant with a bunch of different spices and onion, made with a homemade marinara sauce for the top. Plus oven roasted Yukon gold potatoes in waffle style.

First attempt at making pastelón (Puerto Rican lasagna) at home. Still need some tinkering with the recipe, but it was edible. We'll definitely try it again, and plan to add it to our weekly dinner rotation as long as plantains are available.

Pork roast burger. After I de-boned the roast, I took all the smaller bits and put them in my food processor with one egg, breadcrumbs, potato flakes, onions and Italian seasonings.

Almost like a fish cake.

What a day!...What a day.....

We had three hydro failures today but no big deal since we have a generator. However, we didn't have any internet or landlines available. Cell phone service was available but not all patients in remote area have it. So out with our bags, making unplanned house calls.

Just some fruity wine for now until I figure out what I want to cook. Tired.
