Spaghetti all’Amatriciana!
Another Roman-style pasta item. Sautéed guanciale (cured jowl bacon), onion, tomatoes, parmesan. Seasoned with fresh thyme, S&P and generous dried pepper flakes. Tomatoes are traditional, either canned or fresh. I had fresh on hand so that is what I used. Onions are allowable but most recipes seem not to include them. Balance is important as always; I use guanciale : pasta : cheese ratio of 1:1:1. Tomatoes should play a collaborative role - enough to be noticeable but should not drown the meat and cheese. |
