Not quite dinner time. Preparing my Riesling Onion Soup base.

1... Caramelizing the onions in lots of butter.
2... Then adding the chicken broth, chicken stock and wine.
3... Later, I'll scoop some in an oven proof bowl, add the garlic croutons and top with Provolone, Parmesan and old Cheddar. Then bake for a few minutes until the cheese is melted.

Went to an old Italian place that's been downtown for 40+ years, same basic menu.

Got there, and couldn't decide between 1) Veal parmigiana or 2) baked manicotti. Ordered (and drank) the first Chianti, then when the waitress returned, I told her I couldn't decide, so she would have to pick 1 or 2 (no description) She picked 2, and MAN, that was some comfort food! Metal tray all full of cheesy goodness, blacked on the edges where cheese just landed alone on the edge. Shells were just a bit softer than I like, I bet they boiled them first.
