Change of plans. I'm keeping my stew for girls' night tomorrow. Instead, a chicken schnitzel with rice.
Standard recipe: Chicken breast, butterfly cut, tenderize, flour, egg bath and bread crumbs then deep fried. |

Wings (air fry) and a $4 Pizza. A large local chain (Gabriel Pizza) is a sponsor of our NHL team. They got a promotion that if the Ottawa Senators score 4 goals in a game, you can get the Senators Pizza (pepperoni, cheese and some dry-cured cup & crisp pepperoni) for $4. Its costing them lots of profit as the team has score 4+ goals in 3 of the first 4 games...

Seven spice and sumac chicken, on cumin rice
Great Middle East-inspired fragrant entree with complex flavors due to the use of nine seasonings. Easy to make when all ingredients are on hand. Seven spice is a common Lebanese spice mixture, and sumac appears widely in regional food items. Cumin rice is a staple with the addition of a small amount of turmeric for color. Saffron can be substituted for turmeric, at much greater expense. Makes 2 portions 1 large boneless, skinless chicken breast, cubed Seven spice (1/2t or so) Sumac to taste (1/2t or so) Salt to taste 1/2 cup EVOO Cumin rice Heat oil, add seven spice and temper (fry) to open or bloom the spices. Add chicken and sautee until done. Add sumac when the chicken is halfway cooked. Plate rice, then chicken on top of rice. Garnish with more sumac. Serve with fresh fruit for dessert. Enjoy! Seven spice - I made it from ground spices, it can easily be made from whole spices which are dry roasted then ground. The whole spice method is far better but I chose the easy route tonight. Quantities are approximate. Use what you like and find the balance that suits you. Seven spice 1/8t ground cumin 1/8t ground coriander 1/8t ground black pepper 1/8t ground allspice 1/8t ground cinnamon 1/8t ground cloves 1/8t ground nutmeg Cumin rice - basmati is appropriate to the region and is properly prepared when it does not stick or clump together and the grains are separated from one another. 1c basmati rice 1T cumin seeds 1T ghee 1.5c water 1/8t turmeric (optional, for color) Rinse uncooked rice three times, drain. Heat ghee in pot, add cumin seeds and temper until the seeds start sizzling. Add rice, stir, then add water. Bring to a boil, cover and turn off the heat.
